Vanilla dream rice pudding

Vanilla dream rice pudding

Ingredients:
150g (1 cup) short-grained rice
400ml (1 can) coconut milk
125ml (½ cup) water
20g (¼ cup) Vanilla Dream protein powder
½ tsp ground cinnamon
1 tbsp maple syrup
For the garnish:
1 mango (peeled and chopped)
Fresh mint
Equipment:
Large saucepan
Chopping board
Knife
Can opener
Instructions:
- In a large saucepan, combine rice, water, coconut milk, maple syrup, Vanilla Dream and cinnamon. Bring it to boil, then turn down the heat, cover with a lid and simmer for about 15 minutes or until soft and creamy.
- Once cooked, portion the pudding into cups and let it cool down.
- Top with chopped mango and mint, then serve!
