Protein Flapjacks

These vegan protein flapjacks take minutes to prepare, require no fancy ingredients and they’re way better than store-bought protein bars (if we say so ourselves!) 

Protein Flapjacks

300g porridge oats

100g Plain Jane protein powder

1 tsp cinnamon

1/4 tsp nutmeg

Generous pinch of salt

150g peanut butter

1 medium banana

5 tbsp maple syrup

1 tsp vanilla extract

250ml plant milk (I used unsweetened soya)

3 chopped dried figs (or fruit of your choice)

 

Preheat oven to 200⁰C.

 

Method

 

In a large bowl mix the oats, salt, spices & protein powder. Squish the banana in its skin to soften (or mash with a fork) and add to the bowl. Now add the syrup, vanilla extract, peanut butter & milk. Give it a good mix to combine the ingredients.

 

Using a medium sized lined baking tray pour in the mixture and spread evenly. 

 

Bake for 15-20 minutes until golden brown. Allow to cool before slicing into 12 bars.
