High protein sweet potato and cranberry muffins

Ingredients:
1 large sweet potato
1 banana (peeled)
20g (¼ cup) Vanilla Dream protein powder
90g (½ cup) all-purpose or wholemeal flour
30g (¼ cup) dried cranberries (chopped)
1 tbsp baking powder
125ml (½ cup) non-dairy milk
2 tbsp maple syrup
10-12 fresh cranberries (optional)

Instructions:

Cut the sweet potato in half (lengthways) and place it on a lined baking tray flat side up. Bake at 220°C (430°F) for about 50 minutes or until the sweet potato flesh is nice and soft. Remove the skin and let the potato cool down.

Add sweet potato into the blender, along with the broken up banana, non-dairy milk, protein powder and maple syrup. Blend until smooth.

In a mixing bowl, combine flour, baking powder and chopped dried cranberries. Pour in the sweet potato mixture and carefully mix everything together until there are no flour streaks.

Line the muffin tin with cups or spray with a little bit of cooking spray. Heat the oven to 190°C (375°F). Fill each cup about ¾ of the way up. If using fresh cranberries, cut them in half and place at the top of each muffin. Bake in the middle of the oven for about 30-35 minutes.
