Chocolate Chip Cookies

Vegan chocolate chip cookies - crunchy round the edges, chewy in the middle, loaded with chocolate chips and so easy to make! 

 

Recipe  - Makes 8 cookies

180g plain flour (I used spelt)

2 scoops of Chocolate Crush protein powder

100g sugar (I used date sugar)

1 tsp baking soda

1 tsp vanilla extract

Pinch of sea salt

50g dairy free chocolate chips

120ml plant milk (I used soya)

30g oats

1/2 cup coconut oil

 

Method

In a large bowl mix the flour, sugar, salt, oats and baking soda. Add two scoops of protein powder and mix in. 

 

Add the milk, vanilla and oil and mix until everything is combined. Add the chocolate chips, using your hands press the ingredients together and shape into a ball. Refrigerate for 30 minutes. 

 

Preheat oven to 190C

 

Using a lined or non stick baking tray scoop 8 equal size balls of dough onto the tray. Make sure you keep a couple of inches space between the cookie dough as they will spread out while cooking. Press down slightly and bake for 20 minutes until golden brown.

 

Allow to cool for 20 minutes before removing from the tray.
