Berry Haze Pancakes with Caramelised Banana
Vegan berry haze pancakes will become a staple in your kitchen for Sunday brunch! This recipe is simple, easy to make and utterly delish!
*recipe makes 6 pancakes*
100g plain flour (I used oat flour)
1 tsp baking powder
1 scoop of Berry Haze protein powder
240ml plant milk (I used unsweetened soya)
Pinch of salt
Mixed berries
1 banana
Cinnamon
Maple syrup
Method
To a large bowl add the flour, protein powder, baking powder, salt & milk. Mix together until you have a thick batter.
Package
Heat a large non-stick frying pan with a dash of oil on a medium heat. Spoon in the batter & top with a little of the berries. Cook for 2-3 minutes then flip & cook for another 1-2 minutes.
Caramelised Banana
Peel the banana & slice in half lengthways. Carefully add to the frying pan with a little oil on a high heat. Drizzle with maple syrup & a sprinkle of cinnamon. Flip & cook the other side. The banana only takes 1-2 minutes to caramelise.
Stack the pancakes, add the banana & serve with fresh berries. Top with dairy free yoghurt & cinnamon.
